Peanut Butter Cookie

We opened our storefront location in August and immediately started receiving requests for this classic cookie. Our response was that we didn’t have one available because we hadn’t found a recipe to our liking. Eventually, we created our own cookie. Generally speaking, peanut butter cookies run the risk of being dry and having a very short shelf-life. Our cookie has a great deal of moisture making it soft to eat (because we like soft cookies!) We use a crunchy peanut butter to start our cookie off. But being as how we want an intense peanut flavor, we also add our in-house roasted coarse ground peanuts.

Pressed onto a pan with a fork and then sprinkled with sugar crystals after it’s been baked this cookie should be the perfect middle ground between the ones your mom used to make that you enjoyed straight out of the oven, and the ones you purchased in the vending machine when you were in a hurry to snack. With a little bit of a darker and heavier flavor but a lighter texture, if you like peanut butter, this cookie is sure to please.
